Description
Roasted zucchini with garlic yogurt sauce and a honey drizzle delivers a bold balance of savory, tangy, and sweet flavors. This simple dish works as a side or light main.
Ingredients
2–3 zucchini, sliced
2 tbsp olive oil
1/4 cup grated Parmesan cheese
2 cloves garlic (minced or 1 tsp powder)
Salt and black pepper
1 cup plain yogurt
1 clove garlic (minced)
1 tbsp lemon juice
1 tbsp olive oil
Salt and pepper
1–2 tbsp honey
Fresh parsley or dill (optional)
Instructions
1. Slice zucchini into halves or rounds and pat dry.
2. Toss zucchini with olive oil, garlic, salt, pepper, and Parmesan.
3. Spread on a baking sheet and roast at 400°F (200°C) for 20–25 minutes until golden.
4. Mix yogurt, garlic, lemon juice, olive oil, salt, and pepper until smooth.
5. Spread yogurt sauce over roasted zucchini.
6. Drizzle honey on top and garnish with fresh herbs before serving.
Notes
Use fresh garlic for stronger flavor.
Do not overcrowd the baking sheet.
Adjust honey to control sweetness.
Serve warm for best texture.
