Description

A low-carb, hearty casserole blending zucchini with pizza flavors. Perfect for using excess zucchini and satisfying pizza cravings with a nostalgic, family-friendly twist. Baked and ready in under 60 minutes.


Ingredients

4 cups shredded zucchini
½ tsp salt
2 large eggs
½ cup grated Parmesan cheese
1 cup mozzarella cheese (divided)
1 cup cheddar cheese (divided)
1 lb ground beef or ground turkey
½ cup chopped onion
1 cups pizza sauce (or marinara)
1 green bell pepper (chopped)


Instructions

Preheat oven to 375°F (190°C)
Spread zucchini in a colander. Sprinkle with ½ tsp salt. Let drain 30 minutes
Squeeze excess moisture from zucchini with your hands
In a bowl, combine zucchini, eggs, and Parmesan. Mix until a dough forms
Press mixture into a 9×13-inch baking dish
Layer half the mozzarella and cheddar cheese over the crust
In a skillet, brown ground meat (or turkey) with onions and green bell pepper. Drain fat
Spread pizza sauce evenly over the cheese
Top with the remaining cheese and meat mixture
Bake 25–30 minutes until golden and bubbly
Let rest 10 minutes before serving

Use lean ground turkey for a lighter option
