Description

A low-carb casserole featuring a crispy zucchini ‘crust’ stacked with ground beef (or turkey), cheesy toppings, and pizza sauce for a flavorful, family-friendly meal.


Ingredients

4 cups zucchini, shredded
1/2 teaspoon salt
2 large eggs
1/2 cup grated Parmesan cheese
2 cups shredded mozzarella cheese (divided)
1 cup shredded cheddar cheese (divided)
1 lb ground beef (or ground turkey)
1/2 cup onion, chopped
1 jar (about 1415 oz) pizza sauce
1 bell pepper, chopped


Instructions

Preheat oven to 400°F (200°C)
Shred zucchini and let sit with salt in a colander for 10 minutes
Pat zucchini dry, then mix with eggs, Parmesan, and half the mozzarella and cheddar
Press the mixture into a greased baking dish to form a crust
Bake for 20 minutes or until firm
Cook ground beef (or turkey) with chopped onion in a skillet until browned; drain fat
Add pizza sauce as a base layer over the baked crust
Top with cooked meat, bell pepper, and remaining cheeses
Bake for 25 minutes or until golden and bubbly

Notes

Use ground turkey for a leaner, halal option
Drain zucchini thoroughly to avoid a soggy crust
Verify pizza sauce is halal/non-alcoholic
Add extra veggies like mushrooms or garlic for more depth
