Description

Light and crispy zucchini fritters made with simple ingredients and a savory blend of egg, Parmesan, and garlic. A great way to repurpose excess summer squash for a family-friendly snack or appetizer with customizable flavors.

Ingredients

2 medium zucchinis, grated
1 tsp salt, for draining moisture
1 large egg
½ cup all-purpose flour
¼ cup grated Parmesan cheese
2 cloves garlic, minced
½ tsp black pepper
¼ tsp paprika
2-3 tbsp olive oil, for frying

Instructions

Grate zucchini and mix with salt. Let sit for 10 minutes
Squeeze out excess moisture using a colander or cheesecloth
In a bowl, combine drained zucchini, egg, flour, Parmesan, garlic, black pepper, and paprika until a cohesive batter forms
Heat olive oil in a skillet over medium heat until hot but not smoking
Scoop about 2 tablespoons of batter per fritter, flatten slightly, and cook for 2-3 minutes per side until golden and crispy
Transfer fritters to paper towels to drain excess oil
Serve hot with a dipping sauce or on its own

Notes

Draining excess moisture is crucial for achieving crispiness
Fritters store well in an airtight container and can be reheated for 5-10 minutes
Customize with spices like cumin, chili flakes, or fresh herbs
