Ingredients
2 medium zucchinis, grated
1 tsp salt, for draining moisture
1 large egg
½ cup all-purpose flour
¼ cup grated Parmesan cheese
2 cloves garlic, minced
½ tsp black pepper
¼ tsp paprika
2-3 tbsp olive oil, for frying
Instructions
Grate zucchini and mix with salt. Let sit for 10 minutes
Squeeze out excess moisture using a colander or cheesecloth
In a bowl, combine drained zucchini, egg, flour, Parmesan, garlic, black pepper, and paprika until a cohesive batter forms
