Ingredients
1 small seedless watermelon (about 5–6 lbs)
1 cup non-alcoholic silver/blanco tequila substitute (see note)
1/4 cup fresh lime juice
1/4 cup simple syrup (1 cup sugar + 1 cup water, mixed and boiled until dissolved)
1/4 tsp fine sea salt
Fresh mint leaves (for garnish)
Lime wedges (for garnish)
Instructions
Slice the watermelon into 1-inch rounds and remove the rind. Cut into uniform bite-sized circles.
In a mixing bowl, whisk together the non-alcoholic tequila substitute, lime juice, simple syrup, and sea salt.
Dip each watermelon piece into the marinade, letting excess drip off.
Arrange the coated watermelon on a tray, cover, and refrigerate for 30 minutes to 1 hour.
Wash mint leaves and prepare lime wedges as garnish.
Arrange the marinated watermelon on a serving platter, garnish with mint and lime wedges, and serve chilled.
Notes
Use a non-alcoholic tequila substitute that mimics the flavor profile for a similar taste. The watermelon can be prepared a day in advance if marinated in an airtight container in the refrigerator. For a vegan version, ensure the simple syrup is made with vegan-certified sugar.
