Description

A vibrant, refreshing salad combining juicy watermelon, crisp cucumber, tangy feta, and aromatic mint. Perfect for summer gatherings or light meals with a burst of sweet, salty, and zesty flavors.


Ingredients

45 cups watermelon, cubed
1 cucumber, sliced or chopped
1/2 cup feta cheese, crumbled
1/41/2 red onion, thinly sliced
23 tablespoons fresh mint, chopped
2 tablespoons olive oil
2 tablespoons lime juice
1 teaspoon honey (optional)
Pinch of salt
Pinch of black pepper


Instructions

Cube watermelon, slice cucumber, thinly slice red onion, and chop fresh mint.
Soak red onion in cold water for 10 minutes if desired (to mellow flavor). Drain and set aside.
In a small bowl, whisk together olive oil, lime juice, honey (if using), salt, and pepper until emulsified.
In a large bowl, gently toss cubed watermelon, sliced cucumber, and chopped mint. Add drained red onion if using, and mix gently.
Pour dressing over the salad and toss to combine, being careful not to crush watermelon cubes.
Sprinkle crumbled feta on top and lightly mix to incorporate.
Serve immediately or chill for a more refreshing taste.

Notes

To balance watermelon’s sweetness, adjust feta quantity for taste.
If using older feta, drain excess moisture with a paper towel to prevent a soggy salad.
Store leftover salad in an airtight container in the fridge for up to 2 days (best served fresh).
