Description

A refreshing and hearty twist on the classic Caesar salad, combining cheese tortellini, crisp romaine, and vibrant flavors into a filling meal perfect for any occasion.


Ingredients

1 large bag cheese tortellini (~510 g)
2 small heads romaine lettuce (thinly sliced)
1 (15 oz) can chickpeas (drained & rinsed)
1 pint cherry tomatoes (halved)
1/2 cup red onion (thinly sliced)
1 cup shaved parmesan cheese
1 cup croutons (or more)
1 cup Caesar dressing
Juice of 1/2 lemon
1/4 cup fresh basil (or herbs of choice)
Salt & black pepper (to taste)


Instructions

Boil the tortellini according to the package instructions until al dente. Drain and rinse with cold water to stop the cooking process; let it cool slightly.
In a large bowl, add the cooked tortellini, drained chickpeas, halved cherry tomatoes, thinly sliced red onion, sliced romaine lettuce, shaved parmesan, and croutons.
Pour Caesar dressing over the salad and add the juice of 1/2 lemon. Toss everything together until well coated.
Fold in the fresh basil (or herbs of choice). Season with salt and black pepper to taste.
Mix well, taste, and adjust seasoning if needed. Serve immediately.

Notes

Use freshly shaved parmesan for the best flavor.
Leftover tortellini works well in this recipe, making it great for using up leftovers.
For a heartier meal, you can add grilled vegetables or a protein like chicken or tofu.
Store leftovers in an airtight container in the refrigerator for up to 2 days.
