Description

Ingredients

6 tomatoes, seeded and diced (Roma or Campari preferred)
2 tbsp fresh basil, finely chopped
2 cloves garlic, minced
1/2 tsp salt
1/4 tsp black pepper
3 tbsp olive oil
1 tbsp balsamic vinegar
1 baguette (sliced into 1/2-inch pieces)
Optional: shredded Parmesan cheese


Instructions

In a bowl, combine diced tomatoes, fresh basil, minced garlic, salt, and black pepper.
In a small bowl, whisk balsamic vinegar while slowly drizzling in olive oil.
Pour the dressing over the tomato mixture and toss gently to coat. Let rest 10–15 minutes.
Toast the baguette slices on a baking sheet in a preheated 350°F (180°C) oven for 5–7 minutes until golden.
Spoon the tomato mixture onto the toasted baguette slices. Top with optional Parmesan if desired.

Notes

Use ripe, room-temperature tomatoes for the best flavor.
Store the tomato mixture in the refrigerator for up to 24 hours. Toast the bread fresh before serving.
Substitute olive oil with infused oils (e.g., basil or garlic) for added flavor. Add mozzarella or avocado for a heartier twist.
