Ingredients

1.31.5 kg beef brisket
½ teaspoon salt
½ teaspoon black pepper
3 tablespoons olive oil
34 onions, thinly sliced
4 cloves garlic, minced
1 tablespoons tomato paste
3 carrots, cut into chunks
46 celery stalks, cut into pieces
1 tablespoon flour
½ cup beef broth
45 bay leaves
Fresh parsley, optional (for garnish)


Instructions

Preheat oven to 175°C (350°F)
Pat the beef brisket dry with paper towels and season both sides with salt and black pepper
Heat olive oil in a large oven-safe pot over medium heat
Add the sliced onions and cook until they soften and turn lightly browned (10-15 minutes)
Add minced garlic and cook for an additional 3-5 minutes until fragrant
Place the seasoned brisket on top of the aromatic mixture with the fat side facing up
Spread tomato paste evenly over the meat
Add the carrots and celery around the brisket
Mix flour with beef broth until smooth and pour the mixture into the pot
Add the bay leaves
Cover the pot with a lid or aluminum foil and transfer to the oven
Braise for 3-3.5 hours until the meat is tender and easily pulls apart
Remove the brisket from the pot and let it rest (10-15 minutes) before slicing

Notes

Add flour and broth gradually to create a smooth sauce without lumps.
For a richer flavor, use olive oil if the brisket doesn’t render enough fat during cooking.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Serve with mashed potatoes, crusty bread, or brown rice to soak up the flavorful gravy.
