Ingredients
1.5 lbs flank or skirt steak
2 tbsp olive oil
1 lime, juiced
2 cloves garlic, minced
1 tsp chili powder
1 tsp smoked paprika
1 tsp cumin
0.5 tsp dried oregano
1 tsp salt
0.5 tsp black pepper
3 cups cooked white rice
2 tbsp fresh cilantro, chopped
1 tbsp butter or oil
1 cup black beans
1 cup corn
1 cup cherry tomatoes
1 avocado, sliced
1 cup shredded lettuce
0.25 cup red onion, diced
0.5 cup Mexican-style shredded cheese
0.25 cup sour cream
Instructions
Whisk together olive oil, lime juice, garlic, chili powder, paprika, cumin, oregano, salt, and pepper in a large bowl.
Add the steak to the marinade and let sit for at least 30 minutes.
Heat a grill pan or large skillet over high heat and cook steak to desired doneness.
Let the steak rest for 5-10 minutes, then slice against the grain.
In a bowl, mix cooked rice with cilantro, remaining lime juice, and butter or oil.
