Ingredients

1 pound boneless, skinless chicken breast, cut into bite-sized pieces
16 ounces cottage cheese (4% recommended)
2 garlic cloves
½ teaspoon kosher salt
¼ teaspoon black pepper
¼ teaspoon onion powder
1 teaspoon avocado oil
6 ounces frozen chopped spinach, thawed and well drained
1 (14–16 ounce) can artichoke hearts, drained, squeezed dry, and finely chopped
½ cup low-moisture part-skim shredded mozzarella cheese
⅔ cup finely grated Parmesan cheese


Instructions

Preheat your oven to 350 degrees Fahrenheit.
In a food processor or blender, combine the cottage cheese, garlic cloves, salt, pepper, and onion powder; blend until completely smooth and velvety.
In a large non-stick skillet, heat the avocado oil over medium-high heat and sear the chicken pieces until cooked through; remove from heat.
In a large bowl, stir together the blended cheese mixture, seared chicken, squeezed-dry spinach, and chopped artichoke hearts.
Transfer the mixture into a 9×13 inch ceramic or glass baking dish and spread evenly with a silicone spatula.
Sprinkle the top uniformly with the shredded mozzarella and grated Parmesan cheese.
