Ingredients
- 1.5 to 2 pounds boneless skinless chicken breasts or thighs
- 1.5 cups long-grain white rice (not instant rice)
- 3 cups low-sodium chicken broth
- Juice and zest of 1 to 2 lemons
- 4 to 6 cloves garlic, minced
- 2 teaspoons dried oregano
- 2 teaspoons dried basil or Italian seasoning
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil or butter
- Fresh parsley for garnish
Instructions
Pat chicken pieces dry with paper towels. Season generously with salt and pepper on both sides.
If desired, brown the chicken in olive oil in a skillet over medium-high heat for 2 to 3 minutes per side. This step is optional but adds extra flavor and helps seal in juices.
Add rice to the bottom of your slow cooker.
Pour in chicken broth, lemon juice, and lemon zest. Add minced garlic, oregano, basil, thyme, salt, and pepper.
Stir everything together to combine. Place seasoned chicken pieces on top of the rice mixture. If using, dot with butter.
Cover and cook on high for 3 to 3.5 hours or on low for 6 hours.
The chicken should reach an internal temperature of 165 degrees Fahrenheit and the rice should be tender and fluffy.
Avoid lifting the lid during cooking to maintain consistent temperature.
Once done, fluff the rice with a fork. Remove chicken and slice or shred if desired.
Garnish with fresh parsley and serve with additional lemon wedges on the side.
Notes
Use long-grain white rice only—other types need different liquid ratios.
Don’t stir during cooking or rice won’t cook properly.
