Ingredients
- 1 1/2 pounds jumbo shrimp, peeled and deveined
- 1 yellow onion, thinly sliced
- 2 bell peppers, thinly sliced (any colors)
- 1/4 cup olive oil
- 1 lime
- 8 tortillas (flour or corn)
- 1/2 tablespoon chili powder
- 1/2 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional toppings: avocado, guacamole, sour cream, salsa, cilantro, cheese
Instructions
1. In a small bowl, stir together chili powder, cumin, garlic powder, paprika, oregano, salt, and pepper.
2. In a large bowl, toss shrimp with two tablespoons olive oil, juice from half a lime, and all the fajita seasoning. Let sit while you cook vegetables.
3. Heat remaining two tablespoons olive oil in large skillet over medium heat. Add sliced onions and bell peppers, cooking 4-5 minutes until tender and starting to caramelize.
4. Transfer cooked vegetables to a plate.
5. Add seasoned shrimp to same skillet in single layer. Cook 2-3 minutes on each side until they turn pink and opaque. Don’t overcook or they’ll get rubbery.
6. Add cooked peppers and onions back to skillet with shrimp. Toss everything together for about a minute.
7. Squeeze other half of lime over the top for final burst of brightness.
8. Serve immediately with warm tortillas and your favorite toppings.
