Ingredients

Instructions
1. Preheat the oven to 400°F (200°C). Line a large sheet pan with parchment paper or aluminum foil for easy cleanup.
2. Whisk together 1 tablespoon olive oil, honey, Dijon mustard, minced garlic, salt, black pepper, and optional smoked paprika and fresh herbs in a small bowl until smooth and fully combined.
3. Place the Brussels sprouts and sweet potatoes in a large bowl. Add the remaining 1 tablespoon olive oil and half of the honey Dijon glaze. Toss until every piece is evenly coated.
4. Spread the vegetables in a single layer on the prepared sheet pan.
5. Arrange the chicken breasts on the pan beside the vegetables, leaving space between each piece.
6. Brush the remaining honey Dijon glaze generously over the top of each chicken breast.

Notes
Substitute bone-in chicken thighs for a juicier result — they stay tender even with a few extra minutes in the oven. Check for 165°F (74°C) with a meat thermometer.
