Description

These Rhubarb Shortbread Bars combine a buttery, crumbly crust with a sweet and tangy rhubarb filling for a nostalgic, family-friendly dessert perfect for any occasion.


Ingredients

2 cups rhubarb, sliced
1/2 cup butter, softened
2 eggs, beaten
1 cup all-purpose flour
5 tablespoons confectioners’ sugar
1 cup brown sugar
1/2 cup white sugar
3/4 teaspoon salt


Instructions

Preheat oven to 350°F (175°C) and grease a 9-inch square baking dish.
In a bowl, mix 1 cup flour, softened butter, and confectioners’ sugar until crumbly.
Press the mixture firmly into the bottom of the baking dish.
Bake for 15 minutes until set but pale.
In another bowl, whisk brown sugar, white sugar, beaten eggs, remaining 3 tablespoons flour, and salt until smooth.
Stir in sliced rhubarb until evenly coated.
Pour mixture over the pre-baked crust and smooth the surface.
Return to oven and bake for 35-40 minutes, or until golden and bubbly.
Cool completely before slicing into bars.

Notes

Use fresh rhubarb for best flavor.
Substitute rhubarb with strawberries if unavailable.
Store in an airtight container at room temperature for up to 3 days.
