Description
A vibrant tropical mocktail blending frozen raspberries, pineapple juice, and coconut cream for a sweet, creamy, and refreshing drink perfect for summer. No alcohol required, with optional garnishes to elevate its tropical flair.
Ingredients
1 cup frozen raspberries
¾ cup chilled pineapple juice
½ cup coconut cream
1–2 oz white rum (optional)
1 cup crushed ice
Optional garnishes: Fresh raspberry, pineapple wedge, mint sprig, shredded coconut, honey or simple syrup, fresh lime juice
Instructions
Chill a glass in the freezer for 5–10 minutes
Optional: Rim the chilled glass with coconut or crushed raspberries for decoration
Add frozen raspberries, pineapple juice, coconut cream, crushed ice, and rum (if using) to a blender. Blend until smooth
Taste and adjust flavors by adding honey/simple syrup for sweetness or lime juice for tang. Thin with more pineapple juice if needed
Pour into the prepared glass, top with your choice of garnishes, and serve
Notes
Omit rum to keep the drink halal/vegan
For richer texture, use coconut milk instead of juice
Adjust pineapple juice sweetness by substitution with unsweetened juice and adding syrup as needed
Use fresh raspberries if unavailable frozen, but only freeze for 15 minutes before blending
