Ingredients
1 cup all-purpose flour
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
Pinch of nutmeg
1/4 cup heavy whipping cream
3 oz vanilla yogurt
1 large egg
1 can (15 oz) peaches, diced (reserve juice for glaze)
Vegetable or canola oil (for frying)
Instructions
Whisk together flour, sugar, baking powder, cinnamon, ginger, salt, and nutmeg in a bowl
Combine heavy cream, yogurt, and egg in another bowl
Gradually mix wet and dry ingredients, then gently fold in diced peaches
Form batter into 1-inch balls and flatten slightly with a fork
Heat oil in a pan over medium (350°F/175°C). Fry fritters 1-2 minutes per side until golden
Drizzle glaze using reserved peach juice (mix 2 tbsp juice with 1 tbsp sugar and a splash of oil if available)
Notes
Adjust dough consistency with 1-2 tbsp flour if too sticky. For a dairy-free version, substitute yogurt with non-dairy alternative and ensure oil/frying medium is neutral. Store in an airtight container with parchment sheets between fritters.
