Ingredients
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
3/4–1 cup sugar
2 large eggs
1/2–3/4 cup vegetable oil or halal-friendly melted butter
1 teaspoon non-alcoholic vanilla extract or vanilla bean paste
1 1/2–2 cups fresh peaches, peeled and chopped (or canned peaches in juice)
3/4 cup brown sugar
1/2 cup all-purpose flour
1/4 cup vegan butter or halal-friendly oil
1 teaspoon ground cinnamon for topping
Optional: 1/4 cup chopped nuts
Instructions
Preheat oven to 350°F (175°C)
Line a muffin tin with parchment paper liners
In a bowl, beat eggs, sugar, vegetable oil (or halal butter), and non-alcoholic vanilla extract until smooth
In another bowl, whisk 2 cups all-purpose flour, baking soda, salt, and 1 teaspoon cinnamon
Gradually fold the dry ingredients into the wet mixture until just combined (do not overmix)
Add chopped peaches to the batter and gently mix
In a separate small bowl, combine brown sugar, 1/2 cup flour, 1/4 cup vegan butter (or halal oil) until crumbly
Fill each muffin liner 2/3 full with peach batter, top generously with crumb mixture using 1 teaspoon cinnamon per 1/2 teaspoon topping
Bake for 30 minutes or until golden and a toothpick inserted comes out clean
Notes
Adjust sweetness by varying sugar amounts
Use ripe peaches for maximum flavor
Topping ingredients can be halved for less crust
Cool completely before storing in airtight container
Peaches may be frozen (thaw first) in a pinch
