Description

A vibrant summer appetizer featuring toasted French baguette topped with creamy whipped ricotta, juicy peaches, and fresh basil. Perfect for gatherings or a light snack, this sweet-meets-creamy dish celebrates seasonal flavors with a refreshing twist.


Ingredients

1 cup ricotta cheese
12 tbsp olive oil (for whipped ricotta)
1 tbsp honey (for whipped ricotta)
1 tsp lemon zest (for whipped ricotta)
Pinch of salt (for whipped ricotta)
1 French baguette, sliced (½-inch slices)
2 tbsp olive oil (for toasting)
23 ripe peaches, sliced or diced
12 tbsp honey (for drizzling)
1 tbsp balsamic glaze (optional)
Fresh basil leaves, chopped or torn
Salt & black pepper to taste


Instructions

Preheat oven to 400°F (200°C)
Slice French baguette into ½-inch pieces and brush both sides with 2 tbsp olive oil
Toasted for 5–10 minutes until golden
In a mixing bowl, combine ricotta, 1–2 tbsp olive oil, 1 tbsp honey, lemon zest, and salt. Whisk or blend until smooth and creamy
In a separate bowl, gently toss sliced peaches with 1–2 tbsp honey and a pinch of salt
To assemble, spread whipped ricotta onto each toasted baguette slice, top with peaches, drizzle with remaining honey, and garnish with fresh basil
Optional: Drizzle with balsamic glaze before serving

Notes

Use ripe, juicy peaches for best flavor
For a non-dairy option, substitute ricotta with vegan whipped cashew cream
To save time, prep whipped ricotta and sliced peaches ahead of toasting
