Description
Light and moist cupcakes with a peach-sparkling refresh blend, perfect for summer celebrations. Substituted non-alcoholic sparkler for the festive twist per halal requirements.
Ingredients
1½ cups all-purpose flour
1½ teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
½ cup non-alcoholic sparkling wine or sparkling water
¼ cup milk
1 teaspoon vanilla extract
½ cup peach puree (fresh or canned)
Instructions
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners
Whisk together flour, baking powder, and salt
Cream butter and sugar until light and fluffy
Add eggs one at a time, mixing well after each
Mix sparkling wine/milk, vanilla, and peach puree in a separate bowl
Alternately combine wet and dry mixtures until just mixed
Fill liners two-thirds full with batter
Bake 18-20 minutes until golden
Cool on wire rack before serving
Top with peach slices or peach glaze if desired
Notes
For peach glaze: mix 1/4 cup powdered sugar with 1 tbsp peach puree until smooth
Use fresh peaches pureed for best flavor
Non-alcoholic sparkling wine or club soda are ideal substitutes
Store in airtight container at room temperature up to 2 days
