A simple, flavorful dish combining tender zucchini and juicy tomatoes layered with aged Parmesan and optional mozzarella, baked to golden perfection. Easy to prepare and family-approved, it’s ready in 30 minutes for quick weeknight meals.
Ingredients
2 medium zucchini (thinly sliced)
2–3 medium tomatoes (thinly sliced)
½–1 cup grated Parmesan cheese
½ cup mozzarella cheese (optional)
2 tbsp olive oil
2 cloves garlic (minced)
1 tsp dried Italian herbs (oregano, basil)
Salt & black pepper (to taste)
Optional: breadcrumbs (for topping)
Optional: fresh parsley (garnish)
Instructions
Preheat to 375°F (190°C). Lightly grease a baking dish to prepare for layering the vegetables.
Arrange zucchini slices in a layer on the bottom of your greased baking dish. Add a layer of tomato slices on top, alternating if you want a pattern for visual appeal.
Mix olive oil, minced garlic, salt, pepper, and Italian herbs in a small bowl. Drizzle this seasoned oil evenly over the arranged vegetables to incorporate flavor.
Sprinkle grated Parmesan cheese evenly over the top of the vegetables. If using, add mozzarella cheese followed by breadcrumbs for a crispy finish.
Bake the dish for 25–30 minutes until the vegetables are tender and the cheese is melted and golden brown. Keep an eye on it towards the end for the perfect crispiness.
Garnish with fresh parsley, adding a pop of color and freshness. Serve warm as a delightful side or main dish.
