This flavorful Parmesan grilled zucchini is a healthy side dish that combines tender zucchini with garlic, olive oil, and melted Parmesan cheese. Perfect for summer gatherings or quick weeknight meals, it’s a crowd-pleaser with minimal prep.
Ingredients
2–3 medium zucchini (sliced lengthwise or into rounds)
2 tbsp olive oil
2–3 cloves garlic (minced)
¼ cup grated Parmesan cheese
1 tsp Italian herbs (or mix of oregano, thyme, basil)
Salt and black pepper (to taste)
Optional: fresh parsley or basil for garnish
Instructions
Preheat grill to medium-high heat. Lightly oil the grates to prevent sticking.
Slice zucchini evenly and pat dry to remove excess moisture.
In a bowl, toss zucchini with olive oil, minced garlic, salt, pepper, and Italian herbs until well-coated.
Place seasoned zucchini on the grill in a single layer. Cook for 3 to 4 minutes per side until tender with visible grill marks.
Sprinkle grated Parmesan over zucchini during the last minute of grilling to allow it to melt slightly.
Remove from grill, garnish with fresh parsley or basil if desired, and serve warm.
Notes
Use fresh Parmesan for the best flavor.
If grilling indoors, a grill pan or stovetop pan works well.
Serve immediately for optimal texture, or store in an airtight container for up to 2 days.
