Ingredients

1 cup pancake mix (or homemade batter)
1 cup milk or water
1 egg
2 tablespoons butter or oil (for cooking)
1 lb ground beef or ground chicken (or halal-friendly alternative)
1 onion, chopped
2 cloves garlic (optional)
1 packet taco seasoning (alcohol-free) or 1 tbsp soy sauce + 1 tsp chili powder + 1 tsp cumin + 1/2 tsp paprika (optional)
1 cup shredded lettuce
1 cup diced tomato
1 cup shredded cheddar cheese
Optional: pickles or alcohol-free mayo-based dressing

Instructions

Mix pancake mix with egg and milk/water until smooth but slightly thick.
Pour batter onto a hot non-stick pan, spreading into a wide, thin circle.
Cook until bubbles form on the surface, then flip to brown the other side.
While warm, fold the pancake over a spoon or pan edge to shape into a taco shell.
Sauté ground beef/chicken with onion and garlic until browned.
