Ingredients
1 cup pancake mix (or homemade batter)
1 cup milk or water
1 egg
2 tablespoons butter or oil (for cooking)
1 lb ground beef or ground chicken (or halal-friendly alternative)
1 onion, chopped
2 cloves garlic (optional)
1 packet taco seasoning (alcohol-free) or 1 tbsp soy sauce + 1 tsp chili powder + 1 tsp cumin + 1/2 tsp paprika (optional)
1 cup shredded lettuce
1 cup diced tomato
1 cup shredded cheddar cheese
Optional: pickles or alcohol-free mayo-based dressing
Oil or butter for pan-frying edges (alcohol-free)
Optional sauce: alcohol-free mayo + ketchup or sweet-savory dressing
Instructions
Mix pancake mix with egg and milk/water until smooth but slightly thick.
Pour batter onto a hot non-stick pan, spreading into a wide, thin circle.
Cook until bubbles form on the surface, then flip to brown the other side.
While warm, fold the pancake over a spoon or pan edge to shape into a taco shell.
Sauté ground beef/chicken with onion and garlic until browned.
Add taco seasoning (or soy sauce and spices) and cook until aromatic (5-7 minutes).
Assemble tacos with the meat mixture, lettuce, tomato, cheese, and optional toppings.
Notes
To ensure halal compliance, use alcohol-free taco seasoning or homemade spice blends. For vegetarian options, swap ground meat for a halal-friendly bean mixture. Let the meat rest slightly before filling to make assembly easier. Store leftover tacos in an airtight container in the fridge for up to 2 days.
