Ingredients
3–4 medium zucchini
1 tbsp olive oil
1 small onion, finely chopped
2–3 garlic cloves, minced
1 cup cherry tomatoes, halved
1/2 cup olives, sliced
1 cup chickpeas or white beans
1/2 cup feta cheese, crumbled
1 tsp dried oregano
1/2 tsp paprika
Salt to taste
Black pepper to taste
Fresh parsley or basil for garnish
Instructions
1. Slice zucchini lengthwise and scoop out centers to form boats
2. Lightly salt zucchini and set aside
3. Heat olive oil in a skillet over medium heat
4. Cook onion and garlic until soft and fragrant
5. Add tomatoes, olives, chickpeas, oregano, paprika, salt, and pepper
6. Cook until mixture softens and combines well
7. Place zucchini boats in a baking dish
8. Fill each zucchini with the prepared mixture
9. Bake at 375°F (190°C) for 25–30 minutes until tender
10. Top with feta cheese and fresh herbs then serve
