Ingredients
1 lb Ground Chicken
1 small Zucchini, grated
1/4 cup Feta Cheese, crumbled
2 tbsp Fresh Parsley, chopped
2 tbsp Fresh Dill, chopped
1/2 cup Breadcrumbs
2 cloves Garlic, minced
1 tsp Dried Oregano
1/2 tsp Ground Cumin
1/2 tsp Paprika
1 Large Egg
1/2 tsp Salt
1/4 tsp Black Pepper
Instructions
Place grated zucchini in a clean towel and squeeze out all excess moisture.
In a large bowl, combine ground chicken, squeezed zucchini, feta, herbs, garlic, spices, egg, and breadcrumbs.
Mix until just combined but not over-worked.
Form the mixture into uniform patties approximately 1/2 inch thick.
Heat a nonstick skillet over medium-high heat with a light coating of oil.
Cook the patties for 4-5 minutes per side until the internal temperature reaches 165°F and they are golden brown.
Notes
Ensure you squeeze the liquid out of the zucchini thoroughly to prevent soggy patties. Serve with tzatziki sauce inside a warm pita for an authentic Mediterranean experience. Store leftovers in an airtight container in the refrigerator for up to 3 days.
