Description
Grilled chicken marinated in zesty spices served in warm pita with fresh veggies and tangy tzatziki. A quick, customizable family favorite bursting with Mediterranean flavors.
Ingredients
1–1.5 lb chicken (breast or thighs)
1 cup plain Greek yogurt
2 tbsp olive oil
1–2 tbsp lemon juice
2 tbsp red wine vinegar
3 cloves garlic (minced)
1 tbsp oregano
1 tsp paprika
1 tsp cumin
1 tsp coriander
Salt & black pepper to taste
1 cup Greek yogurt (for tzatziki)
1 cucumber (grated, water squeezed out)
2 cloves garlic (minced, for tzatziki)
1 tbsp olive oil (for tzatziki)
1 tbsp lemon juice (for tzatziki)
Fresh dill (or dried, for tzatziki)
6–8 pita breads
3 medium tomatoes (diced)
1 large cucumber (sliced)
1 red onion (thinly sliced)
2 cups lettuce (shredded, optional)
8 oz feta cheese (crumbled, optional)
Instructions
Marinate chicken in Greek yogurt, olive oil, lemon juice, vinegar, garlic, spices, salt, and pepper; refrigerate 30 minutes–overnight
Make tzatziki by combining Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and dill
Preheat grill or pan; cook chicken 6–8 minutes per side until golden and fully cooked
Warm pita bread
Layer chicken, tzatziki, tomatoes, cucumbers, red onion, lettuce, and feta (if using) in pitas
Notes
Marinate for at least 30 minutes (or overnight for best flavor)
Use zucchini in tzatziki for a heartier texture
Grilling is ideal, but pan-frying or baking work too
Skip red onion and feta for a milder flavor profile
