Ingredients
1.5 lbs chicken breasts, cut into strips
3 tbsp olive oil
2 tbsp lemon juice
3 cloves garlic, minced
1 tsp dried oregano
1 tsp ground cumin
1 tsp smoked paprika
Salt and black pepper to taste
1 cup Greek yogurt
1 cup grated cucumber
1 tbsp fresh dill, chopped
2 cups cooked rice
1 cup cherry tomatoes, halved
1 cup diced cucumber
1/2 cup red onion, thinly sliced
1/2 cup kalamata olives, pitted
1/2 cup feta cheese, crumbled
2 cups romaine lettuce, shredded
Instructions
Whisk olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper in a large bowl.
Add chicken strips to the marinade, coating thoroughly, and chill for 30 minutes.
Grate the cucumber for the tzatziki, squeeze out excess liquid, and mix with Greek yogurt, garlic, dill, and lemon juice.
Heat a cast-iron skillet or grill pan over medium-high heat and cook chicken strips until well browned and cooked through, about 8-10 minutes.
Assemble the bowls by layering cooked rice, shredded romaine, and the grilled chicken.
Top with cherry tomatoes, diced cucumbers, red onion, kalamata olives, and crumbled feta cheese.
Drizzle generously with the homemade tzatziki sauce before serving.
Notes
Ensure you squeeze the grated cucumber thoroughly to keep the tzatziki thick and creamy. Store leftover chicken and vegetables in separate airtight containers for 3-4 days to maintain freshness during meal prep.
