Ingredients

1 cup unsalted butter, softened
1/2 cup powdered sugar
11.5 tsp dried culinary lavender, finely ground
1 tbsp lemon zest
1 tsp vanilla extract
1/4 tsp almond extract (optional)
1/4 tsp salt
2 cups all-purpose flour
1/41/2 cup lemon curd (store-bought or homemade)
1 cup powdered sugar (for optional glaze)
23 tbsp lemon juice (for optional glaze)


Instructions

Preheat oven to 350°F (175°C)
Line baking sheets with parchment paper
Grind dried culinary lavender into a fine powder
In a large mixing bowl, cream softened butter and powdered sugar until light and fluffy
Mix in lemon zest, ground lavender, vanilla extract, optional almond extract, and salt until combined
Gradually add flour, mixing on low speed until a soft dough forms
Divide dough into 1-inch balls, placing on parchment-lined sheets
Press thumb into center of each ball to create a well
Fill indentations with spoonfuls of lemon curd
Bake for 20-25 minutes until golden at edges but tender in centers
Transfer to wire rack to cool completely
Optional glaze: sift powdered sugar into a bowl, whisk in lemon juice gradually, drizzle over cooled cookies
