Ingredients
4 boneless, skinless chicken breasts
1/3 cup olive oil
1/3 cup fresh lemon juice
1 tablespoon lemon zest
3–4 cloves garlic, minced
2 teaspoons dried oregano
½ teaspoon dried basil
½ teaspoon dried thyme
½ teaspoon dried rosemary
Salt, to taste
Black pepper, to taste
Fresh parsley (optional, for garnish)
Instructions
Whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, basil, thyme, rosemary, salt, and pepper in a bowl to create the marinade.
Place chicken breasts in a resealable bag or shallow dish and coat evenly with the marinade.
Refrigerate for 2–5 hours to allow flavors to penetrate the chicken.
Preheat grill to medium-high heat and oil the grates with a brush to prevent sticking.
Grill chicken for 4–5 minutes per side or until internal temperature reaches 165°F (75°C) and juices run clear.
Notes
For best flavor, use fresh lemon zest and high-quality olive oil.
Use a meat thermometer to ensure chicken is fully cooked but not overdone.
Let chicken rest for 5 minutes before serving to maintain juiciness.
Marinated chicken can be frozen for up to 3 months if stored properly.
