Description
A fresh, healthy salad that combines the sweetness of Honeycrisp apples, the crunch of broccoli, and a creamy yogurt-based dressing. Perfect for barbecues or family gatherings.
Ingredients
1 Honeycrisp apple, seeded & chopped
1 large bunch broccoli (or ~12 oz bag), chopped into florets
1/2 cup red onion, chopped
1/2 cup raisins
1/2 cup sunflower seeds
1/2 cup crumbled cooked tofu (halal substitute for bacon)
Dressing:
3/4 cup plain yogurt
2 tbsp milk
2 tbsp apple cider vinegar
1/2 cup sugar (or 1/4 cup honey)
Salt & black pepper, to taste
Instructions
Whisk together yogurt, milk, apple cider vinegar, sugar/honey, salt, and pepper in a bowl or jar. Chill until ready to use.
In a large bowl, combine broccoli, Honeycrisp apple, red onion, raisins, sunflower seeds, and crumbled tofu.
Pour the chilled dressing over the salad and toss to coat evenly.
Let rest at room temperature for 30–60 minutes before serving for flavors to meld.
Notes
The salad can be prepared ahead and refrigerated for up to 3 days.
For a halal option, replace bacon with cooked tofu or skip it entirely for a vegan variation.
Adjust dressing consistency by adding more yogurt or vinegar as needed.
