This dish is designed for busy weeknights, offering a perfect harmony of citrus brightness, savory spices, and fresh vegetables. It is a family-friendly, customizable, and reliable dish that brings restaurant-quality flavors into your home with minimal effort and maximum satisfaction.

Ingredients

10-12 boneless, skinless chicken thighs
1/3 cup olive oil
1 tablespoon paprika
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon ground cumin
1/2 teaspoon red chili flakes
2 garlic cloves, grated
1 tablespoon honey
Freshly cracked black pepper, to taste
Zest and juice of 2 limes
2 cups white rice
1 3/4 cups chicken broth
4 mini cucumbers, sliced
2 ripe avocados, sliced
1/2 cup pickled red onions
2 tablespoons chopped fresh cilantro
1/2 cup olive oil for dressing
1 tablespoon cider vinegar
1 tablespoon Dijon mustard
1 tablespoon honey for dressing
1 teaspoon salt
1/2 teaspoon red chili flakes
1 garlic clove, grated
Zest and juice of 1 lime
2 tablespoons chopped fresh cilantro

Instructions

Whisk together the marinade ingredients and toss with the chicken thighs; let sit for at least 20 minutes.
Prepare the rice by simmering in chicken broth until fluffy.
Grill the chicken thighs over medium-high heat until charred and cooked through, about 5-7 minutes per side.
Whisk together all dressing ingredients in a jar until emulsified.
Assemble bowls by layering rice, grilled chicken, cucumbers, avocado, and pickled onions.
Drizzle with the honey-lime dressing and garnish with extra cilantro.

Notes

Use chicken thighs to ensure the meat stays juicy since they contain a better fat ratio for grilling. Substitute cider vinegar for red wine vinegar to keep the recipe alcohol-free. Keep leftover chicken in an airtight container for up to 3 days.
