Ingredients

1 tablespoon butter or olive oil
1 large yellow onion, diced
2 large carrots, peeled and diced
1 celery stalk, diced
2 cloves garlic, minced
1/4 cup all-purpose or gluten-free flour
1/2 teaspoon smoked paprika
3 cups vegetable broth
4 cups fresh broccoli florets, chopped
2 cups 1% milk
1 cup low-fat cottage cheese, blended until smooth
4 ounces sharp cheddar cheese, shredded

Instructions

Place a large soup pot over medium heat and melt the butter or oil.
Add diced onions, carrots, and celery, cooking until softened, about 10 minutes.
