Ingredients
1.5 lbs boneless skinless chicken breast, cubed
2 medium sweet potatoes, peeled and cubed
1 cup broccoli florets
1 cup brown rice or jasmine rice
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
0.5 teaspoon ground cumin
Salt and black pepper to taste
Green onions, sliced (for garnish)
Instructions
Preheat your oven to 400 degrees Fahrenheit.
Toss cubed sweet potatoes with olive oil, salt, and pepper on a rimmed baking sheet and roast for 25 to 30 minutes until tender.
Cook the rice according to package directions, using water or chicken broth, then fluff with a fork.
In a bowl, toss the chicken pieces with garlic powder, onion powder, smoked paprika, cumin, salt, and pepper.
Heat a large skillet over medium-high heat with a splash of oil and sear the chicken until golden brown and cooked through.
Add broccoli to the skillet during the last 3-5 minutes of cooking the chicken until tender-crisp.
