1 pound lean ground turkey
2 medium zucchini, diced
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 red bell pepper, diced
1 (14.5-ounce) can diced tomatoes, drained
1 teaspoon Italian seasoning
1 teaspoon smoked paprika
½ teaspoon dried oregano
½ teaspoon onion powder
½ teaspoon garlic powder
Salt and freshly ground black pepper, to taste
½ cup shredded mozzarella or Parmesan cheese (optional)
2 tablespoons chopped fresh parsley or basil
Instructions
Heat olive oil in a large non-stick skillet or cast-iron pan over medium-high heat.
Add the diced onion and red bell pepper, sautéing until softened.
Add the ground turkey to the skillet and cook until it is browned and no longer pink.
Stir in the minced garlic, Italian seasoning, smoked paprika, dried oregano, onion powder, and garlic powder, cooking for 1 minute until fragrant.
Add the diced zucchini to the pan and cook for 5-7 minutes until tender-crisp.
