Description
A quick, one-pan meal combining lean ground turkey and zucchini. This savory dish is juicy, flavorful, and perfect for family dinners or meal prepping.
Ingredients
1 lb ground turkey
2 medium zucchinis, sliced into thick rounds
1–2 tbsp olive oil (for cooking turkey)
1 tbsp olive oil (for zucchini)
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1 tsp black pepper
½ cup Greek yogurt (or sour cream)
1 tbsp Dijon mustard
2 tbsp fresh herbs (chives or parsley, chopped)
2 cups cooked rice or mashed potatoes
Instructions
Pat ground turkey dry and season with garlic powder, onion powder, salt, and black pepper.
Heat 1–2 tbsp olive oil in a skillet over medium-high heat. Cook turkey until browned (5–7 minutes).
Add 1 tbsp olive oil to the skillet, then cook zucchini slices until tender (4–5 minutes). Add remaining salt and pepper.
In a bowl, mix Greek yogurt, Dijon mustard, herbs, and a pinch each of salt and pepper.
Stir yogurt mixture into the skillet with turkey and zucchini. Serve over cooked rice or mashed potatoes.
Notes
Greek yogurt can be substituted with sour cream for richness.
For meal prep, refrigerate cooked mixture in an airtight container for up to 3 days.
Oven-bake zucchini slices at 400°F (200°C) for 15 minutes for a golden finish.
