Ingredients

2 chicken breasts, sliced into 4 thin cutlets
3 tablespoons extra virgin olive oil
4 slices fresh mozzarella
3 medium tomatoes, chopped
1/2 cup red onion, diced
2 cloves garlic, minced
1 tablespoon honey
2 tablespoons balsamic vinegar
Salt and black pepper to taste
1 teaspoon garlic powder
1 teaspoon dried basil


Instructions

Slice each chicken breast horizontally to create 4 thin cutlets.
Brush the chicken with 2 tablespoons of olive oil and season with salt, pepper, garlic powder, and dried basil.
Let the chicken rest for 15 minutes.
In a medium bowl, combine the chopped tomatoes, onion, and minced garlic.
In a small bowl, whisk together the honey and balsamic vinegar with the remaining tablespoon of olive oil.
Preheat a grill or cast-iron grill pan over medium-high heat.
Grill the chicken for 4-5 minutes per side until fully cooked.
