Ingredients

2 chicken breasts
1 cup plain Greek yogurt (marinade)
2 tbsp olive oil

1 tsp sweet paprika
1 tsp kosher salt
½ tsp black pepper
1 cup plain Greek yogurt (for dip)
⅓ cup dill and parsley (fresh or dried)
¼ cup milk (or almond milk)
1 tbsp apple cider vinegar
1 tbsp white wine vinegar (substituted with apple cider vinegar)
1 tsp honey or agave
½ tsp salt (for dip)
¼ tsp garlic powder (for dip)
Optional sides: tomatoes, cucumber, naan bread, cooked rice


Instructions

Combine Greek yogurt, olive oil, garlic, lemon juice, oregano, paprika, kosher salt, and black pepper in a bowl to create the marinade
Cut chicken breasts into cubes suitable for skewering and mix with the marinade
Cover and refrigerate for at least 2 hours, up to 8 hours for maximum flavor
If using skewers, thread marinated chicken pieces onto soaked wooden skewers
Preheat grill or frying pan over medium-high heat
Cook skewers until chicken is golden and fully cooked (internal temperature of 165°F)
While cooking, prepare the dip by blending Greek yogurt with herbs, milk, vinegar, honey, salt, and garlic powder until smooth
