Ingredients
2 slices bread (sourdough or thick white bread)
2 oz goat cheese (softened or crumbled)
2 oz shredded white cheddar (or mozzarella)
2 tablespoons honey (divided)
2–3 tablespoons butter
Pinch of red pepper flakes (optional)
Instructions
Butter each slice of bread on one side evenly.
On the unbuttered sides, spread goat cheese and sprinkle shredded cheese. Drizzle half the honey over the cheese.
Place the second slice of bread on top, buttered side out.
Heat skillet over medium-low heat. Cook the sandwich 3–5 minutes per side until golden and crispy.
Once cooked, drizzle remaining honey on top and add red pepper flakes if desired.
Slice in half and serve warm.
Notes
Use sourdough for a tangy flavor or mozzarella for a softer texture.
Adjust honey to taste—start with 1 tablespoon then add more.
Crisp bread by toasting briefly before assembling.
