Ingredients
2 cups grated zucchini
1 large egg
½ cup grated Parmesan cheese
¼ cup cornstarch
Salt and black pepper, to taste
1 tbsp olive oil
2 cups shredded cheddar cheese
2 tbsp garlic butter (or olive oil)
Instructions
Grate zucchini and squeeze out excess moisture with a towel or cheesecloth
In a bowl, mix zucchini, egg, Parmesan, cornstarch, salt, and pepper to form a thick batter
Heat 1 tbsp olive oil in a skillet; flatten the mixture into 2 round patties and cook 3–4 minutes per side until golden
Remove patties and place one in the pan. Top with 1 cup cheddar, then layer the second patty on top
Cook 2–3 minutes per side until cheese is melted and patties are crispy
Notes
Ensure all moisture is removed from zucchini to avoid sogginess
Use parchment paper between layers for easier flipping
Substitute garlic butter with olive oil for a non-dairy version
