Ingredients
Sirloin steak (1.5 pounds, cut into bite-sized pieces)
Olive oil (2 tablespoons)
Unsalted butter (2 tablespoons)
Garlic (4 cloves, minced)
Salt (to taste)
Black pepper (to taste)
Zucchini (2 medium, sliced into 1/4-inch rounds)
Optional: Fresh parsley (for garnish)
Instructions
Pat the steak dry and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat until shimmering.
Sear the steak in batches (2-3 minutes per side) until browned. Set aside.
Add butter, garlic, and a pinch of salt to the skillet. Cook 1-2 minutes, stirring to form a golden paste.
Toss the zucchini in the garlic butter (2-3 minutes) until tender.
Return the steak to the pan and baste in the sauce for 30 seconds. Garnish with parsley.
Notes
Use a heavy skillet (like cast iron) for optimal heat retention.
Let the steak rest 5 minutes before serving for juicier bites.
Optional: Add lemon zest to the butter for a fresh twist.
Savory side pairing: Roasted potatoes or steamed green beans.
