Ingredients
1 bag (16 oz) coleslaw mix
1 can black beans (rinsed & drained)
1½ cups corn (canned or fresh)
1 jalapeño (finely diced)
1 red bell pepper (diced)
3 green onions (sliced)
¼ cup fresh cilantro (chopped)
1 tbsp taco seasoning
½ tsp ground cumin
1 bag chili cheese corn chips (Fritos), reserve some for topping
½ cup sour cream
½ cup mayonnaise
¼ cup lime juice
2 tbsp chipotle sauce (from canned chipotles in adobo)
Instructions
In a large bowl, combine the coleslaw mix, black beans, corn, jalapeño, bell pepper, green onions, and cilantro
Add taco seasoning and cumin, tossing until evenly mixed
In a medium bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce
Pour the dressing over the salad mixture and toss to coat
Stir in most of the corn chips for a crushed texture
Top with reserved chips just before serving for maximum crunch

Adjust jalapeño to control spice level
Customize with additions like shredded cheese or avocado
