Description

A crisp, herbaceous salad blending refreshing cucumbers, creamy halal-certified feta, and a tangy olive oil dressing. Ideal as a summer side or light appetizer, this no-cook recipe is packed with hydration, healthy fats, and vibrant flavor.

Ingredients

4 cups cucumbers, sliced (seeds removed)
1/4 cup red onion, very thinly sliced
1 avocado, diced
1/4 cup fresh dill, chopped
1/2 cup halal-certified feta cheese, crumbled
1/4 cup olive oil
2 tablespoons apple cider vinegar (non-alcoholic alternative to red wine vinegar)
1 teaspoon Dijon mustard
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and black pepper, to taste

Instructions

Peel and slice cucumbers, removing seeds for extra crispness
Thinly slice red onion and let sit for 5 minutes to mellow flavor
Dice avocado carefully to maintain texture
Chop fresh dill to release aroma
Crack halal-certified feta into the bowl
In a separate bowl, whisk olive oil, apple cider vinegar, Dijon mustard, garlic/onion powder, salt, and pepper until emulsified
Add salad ingredients to dressing, tossing gently to coat without crushing avocado
Serve chilled or at room temperature

Notes

Use English cucumbers for fewer seeds
Add cherry tomatoes or olives for extra flavor
Store in airtight container for up to 24 hours in refrigerator
Fresh herbs enhance cold dishes best when added at the end
Halal feta may need to be sourced from certified suppliers
