Ingredients

1 3/4 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 tsp baking powder
1/4 tsp salt
1 cup granulated sugar
2/3 cup brown sugar
2 large eggs
1 tsp vanilla extract
1/4 cup granulated sugar (for coating)
1 tbsp ground cinnamon


Instructions

Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
Whisk together all-purpose flour, cocoa powder, baking powder, and salt in a bowl.
In another bowl, beat granulated and brown sugars with eggs until light and fluffy. Add vanilla extract and mix.
Gradually combine dry ingredients into wet ingredients until just mixed; avoid overmixing.
Chill dough for 30 minutes.
Coat chilled dough into balls with a mixing coating of granulated sugar and cinnamon.
Place coated dough balls on prepared baking sheet, spaced apart.
Bake for 10 minutes, rotating halfway, until cracked edges form and cookies are set.
Cool completely before transferring to a wire rack.

Notes

Adjust cocoa and cinnamon levels to taste. Chill dough longer for richer flavor. Store in an airtight container for up to 5 days.
Cookies may spread slightly if dough is not sufficiently chilled. For extra crunch, increase coating sugar quantity.
