Ingredients

1 pound ground chicken (at least 7% fat)
1 to 2 medium zucchini, shredded
2 cloves garlic, minced
2 tablespoons fresh chives, chopped
0.5 teaspoon kosher salt
0.25 teaspoon freshly ground black pepper
1 to 2 tablespoons olive oil or avocado oil
1 cup fresh cilantro
1 small garlic clove
0.33 cup mayonnaise
1 tablespoon cottage cheese
1 tablespoon distilled white vinegar


Instructions

Place cilantro, 1 small garlic clove, mayonnaise, cottage cheese, and white vinegar in a food processor and pulse until smooth; refrigerate until serving.
Shred the zucchini using a box grater and squeeze out all excess liquid using a clean kitchen towel or cheesecloth.
In a large bowl, mix the ground chicken, shredded zucchini, minced garlic, chives, salt, and pepper until well combined.
Form the mixture into small, uniform patties.
Heat the oil in a large nonstick or cast-iron skillet over medium heat.
Cook the poppers in batches for 4-5 minutes per side until golden brown and the internal temperature reaches 165°F.
