Ingredients
2 pounds boneless skinless chicken thighs
5 chipotle peppers in adobo sauce plus 2 tablespoons sauce
2 garlic cloves
1 teaspoon Mexican oregano
1 teaspoon cumin seeds
1 tablespoon honey
4 teaspoons kosher salt
1 teaspoon black pepper
2 cups long-grain white rice
3 1/2 cups water
2 bay leaves
3 tablespoons neutral oil
1 1/2 teaspoons kosher salt
Juice of 2 limes
1/2 cup chopped fresh cilantro
2 ripe avocados
1 tablespoon lime juice for guacamole
2 tablespoons cilantro for guacamole
1/4 cup finely chopped red onion
1/2 jalapeño minced
2 cups cooked corn
1/2 roasted poblano pepper diced
Instructions
Blend chipotle peppers, adobo sauce, garlic, oregano, cumin, honey, salt, and pepper to create the chicken marinade.
Marinate chicken thighs for at least 30 minutes.
Grill chicken until charred and cooked through.
Rinse rice and bring to a boil with water, oil, bay leaves, and salt.
Reduce heat to low, cover, and steam rice until tender.
