Ingredients

2 pounds ground beef (80/20 or 85/15)

1 tablespoon Worcestershire sauce

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon black pepper

1 1/2 teaspoons salt

1/2 teaspoon paprika

1 egg


Instructions

1. In a large bowl, combine Worcestershire sauce, garlic powder, onion powder, black pepper, salt, paprika, and egg. Mix these together first before adding beef.

2. Add ground beef to the bowl and gently mix everything together with your hands. Don’t overmix or compact the meat too much.

3. Divide mixture into 8 equal portions and gently form into patties about 1/2 inch thick.

4. Make a small indent in the center of each patty with your thumb to prevent puffing up during cooking.

5. Place formed patties on parchment paper and refrigerate for at least 30 minutes to help them hold together.

6. Heat grill to medium-high heat, about 375-400°F. Oil the grates well.

7. Grill burgers for 4-5 minutes per side for medium doneness, or until they reach your preferred level. Don’t press down on them with your spatula.

8. Let burgers rest for 3-5 minutes before serving for maximum juiciness.

Notes

Don’t skip the chilling step or burgers might fall apart on the grill.

Never press down on burgers while they cook – you’ll squeeze out delicious juices.

Handle meat as little as possible to keep burgers tender.

Make patties slightly larger than your buns – they shrink while cooking.
