Ingredients
8 slices brioche or challah bread (thick-cut)
6 strips halal turkey bacon (or plant-based alternative)
4 large eggs
1/2 cup (120 ml) whole milk
1 tablespoon vanilla extract
1/4 teaspoon ground cinnamon
2 tablespoons unsalted butter
60 g cream cheese (softened)
1 cup (240 ml) pure maple syrup
2 tablespoons non-alcoholic bourbon extract (or maple flavoring)
Pinch of salt
Instructions
Cook halal turkey bacon until crispy, 5-7 minutes (oven or pan).
Chop cooled bacon into small pieces.
Mix softened cream cheese with chopped bacon until smooth.
Whisk eggs, milk, vanilla extract, and cinnamon in a shallow bowl.
Cut a pocket in each bread slice, stuff with cream cheese-bacon mixture, and press to seal.
Dip stuffed bread into custard, coating both sides.
Melt butter in a pan, cook toast 3-4 minutes per side until golden brown.
Combine maple syrup, non-alcoholic bourbon extract, and salt for glaze.
Swirl glaze over cooked toast before serving.
Notes
For optimal flavor, use thick-cut turkey bacon with smoky seasoning.
Non-alcoholic bourbon extract can be substituted with maple syrup mixed with cinnamon/cloves.
