Ingredients
6 hard-boiled eggs (chopped)
4 slices tempeh bacon (synthetic bacon alternative, cooked and crumbled)
¼ cup mayonnaise
1 tsp Dijon mustard
1 tbsp lemon juice
1 celery stalk (finely chopped)
2 tbsp red onion (finely diced)
Salt & black pepper (to taste)
8 large lettuce leaves

Instructions
Peel and chop hard-boiled eggs into small chunks
Crumble tempeh bacon into bite-sized pieces
In bowl, whisk mayonnaise, Dijon mustard, lemon juice, salt, and pepper
Add chopped eggs, crumbled tempeh bacon, celery, and red onion to mixing bowl
Fold ingredients together gently until fully combined
Place 2-3 tbsp mixture on each lettuce leaf
Top with a few tomato slices
Gently fold lettuce leaves into wraps and serve
