Description

A delicious, high-protein weeknight dinner featuring tender strips of steak tossed with crisp-tender, vibrant vegetables in a savory, umami-rich sauce. This healthy stir fry provides a balanced, restaurant-quality meal in under thirty minutes. The combination of fresh aromatics, flank steak perfectly sliced against the grain, and a honey-soy glaze delivers consistent texture and bold flavors that the whole family will enjoy. It is a simple, effective, and nutritious way to satisfy late-day hunger quickly.

Ingredients

1.5 lbs flank or sirloin steak, thinly sliced across the grain
2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon cornstarch
1 tablespoon vegetable oil
2 cups broccoli florets
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 medium carrot, thinly sliced
1 small onion, thinly sliced
2 cloves garlic, minced
1 teaspoon fresh ginger, grated
2 tablespoons oyster sauce (vegetarian substitute if needed)
1 tablespoon honey
1 tablespoon rice vinegar
1/4 cup beef broth

Instructions

In a bowl, combine the thinly sliced beef with 1 tablespoon soy sauce, 1 tablespoon cornstarch, and the sesame oil to marinate for 10 minutes.
Whisk together the remaining soy sauce, oyster sauce, honey, rice vinegar, and beef broth in a small bowl to create the stir fry sauce.
Heat the vegetable oil in a large wok or heavy-bottomed skillet over medium-high heat.
Add the beef in a single layer and sear until browned on all sides, then remove and set aside.
In the same pan, add the broccoli, carrots, onions, and bell peppers, stir-frying for 3-4 minutes until crisp-tender.
Add the garlic and ginger, tossing until fragrant.
Return the beef to the wok and pour the prepared sauce over the mixture.
Stir constantly for 1-2 minutes until the sauce bubbles and thickens significantly, coating all ingredients evenly.

Notes

Always slice the steak against the grain to ensure tenderness. You can prep all vegetables ahead of time to make the cooking process nearly instant. Ensure the wok is very hot to achieve a true stir-fry texture rather than steaming the vegetables.
