Description

A quick and flavorful bowl combining smoky BBQ chicken, creamy cottage cheese, and fresh toppings for a satisfying, nutrient-rich meal perfect for any day.

Ingredients

12 cups cooked chicken (shredded or grilled)
24 tbsp BBQ sauce
1 cup cottage cheese
½1 cup corn (fresh, canned, or frozen)
½ cup cherry tomatoes (halved)
½ avocado (diced or sliced)
¼½ cup green onions (chopped)
Optional: black beans or quinoa
1 tbsp olive oil (optional)
Salt & pepper (to taste)
Optional: garlic powder or smoked paprika

Instructions

Cook or shred chicken if needed. Use leftover rotisserie chicken for convenience.
In a bowl, mix cottage cheese with salt, pepper, and optional spices for enhanced flavor.
Add cottage cheese to the bottom of your serving bowl as the foundational layer.
Top with BBQ-coated chicken, followed by corn, cherry tomatoes, avocado, and green onions.
Optional: Add black beans or quinoa for extra texture and nutrition.
Mix gently to blend flavors, then serve immediately.

Notes

Use lime juice or a non-alcoholic marinade for extra zest if desired.
Storage: Refrigerate leftovers for up to 1 day; best served fresh.
For a crisp texture, add lettuce or spinach as a base.
