Ingredients
1–2 cups cooked chicken (shredded or grilled)
2–4 tbsp BBQ sauce
1 cup cottage cheese
½–1 cup corn (fresh, canned, or frozen)
½ cup cherry tomatoes (halved)
½ avocado (diced or sliced)
¼–½ cup green onions (chopped)
Optional: black beans or quinoa
1 tbsp olive oil (optional)
Salt & pepper (to taste)
Optional: garlic powder or smoked paprika
Instructions
Cook or shred chicken if needed. Use leftover rotisserie chicken for convenience.
In a bowl, mix cottage cheese with salt, pepper, and optional spices for enhanced flavor.
Add cottage cheese to the bottom of your serving bowl as the foundational layer.
Top with BBQ-coated chicken, followed by corn, cherry tomatoes, avocado, and green onions.
